Sweet and Sour Pork Spare Ribs

  • 1 tablespoon oil
  • 2 cloves garlic,crushed
  • ½ red spanish onion, chopped
  • 2 tablespoons sugar
  • 2 tablespoons lime juice
  • ¼ cup pineapple juice
  • 2 teaspoons fish sauce
  • 1 tablespoons oyster sauce
  • ⅓ cup tomato sauce
  • 1 tablespoon sweet chilli sauce
  • 1 tablespoon white vinegar
  • 1kg pork spare ribs
  1. Heat oil in pan, add garlic and onion, cook, stirring until onion is soft. Stir in combined sugar, juices, sauces, and vinegar; bring to boil, simmer, uncovered, 2 minutes or until slightly thickened.
  2. Place spare ribs on a rack over baking dish, brush with sweet and sour sauce. Bake in hot oven for 10 minutes, reduce heat to moderately hot, bake about 15 minutes or until pork is crisp and cooked though. Turn and baste ribs several times during cooking.

My Notes

This is definitely my favourite recipe of my Nana's. I waiting a long time to make it because I was so worried about getting it wrong, and I wanted to make sure I had every ingredient so I could follow it by the book. It was definitely worth the wait! Nana always used to serve with rice that had some peas, sweetcorn, and red peper chopped small, cooked with it.
