Pork Chops with Sweet and Sour peppers

  • 2 Red Peppers
  • 1 Red Onion
  • 1 tablespoon sugar
  • Red Wine vinegar
  • 2 pork chops
  • Thyme
  • Basil
  • 2 cloves garlic
  • 1 slice Butter
  1. Hot pan.
  2. Slice peppers. Slice red onion. Saute peppers and onions in olive oil. Season. 1 tablespoon sugar.
  3. Continue until soft and glistening, then add some red wine vinegar. Toss and add some extra virgin olive oil. Stew for 2-3 minutes.
  4. Slice and handful of basil, add, and cook for 30 seconds.
  5. Take off heat.
  6. Cut through rind of pork to stop them curling so they cook evenly. Season and pat seasoning in.
  7. Add pork chops, laying away.
  8. Add 2 cloves crushed garlic and thyme to the pan.
  9. Fry until brown (putting thyme and garlic under meat) and add a slice of butter.
  10. Base as butter melts.
  11. 3.5-4 minutes per side when thick. Then rest for equally long.
