Fragrant Spiced Rice Pudding

Preheat the oven to 200°C

  • Vanilla pod
  • 2 Cardoman Pods
  • 3 Cloves
  • Cinnamon Stick
  • 400ml Coconut milk
  • 2 tablespoons sugar
  • ~400ml Milk
  • 2 tablespoons of cream
  • 2 limes
  • 200g pudding rice
  • 2 egg yolks
  • 2 tablespoons mascarpone
  1. Flatten a vanilla pod.
  2. Slice and open and scrape out pods.
  3. Put pods in the dish as well
  4. Add 2 cracked cardoman pods.
  5. Add 3 cloves
  6. Add a snapped cinnamon stick
  7. Lightly toast everything for a few seconds
  8. Add 400ml coconut milk.
  9. Add 2 table spoons of sugar.
  10. Add milk.
  11. 2 tablespoons of cream
  12. Zest a lime
  13. Bring to the boil and add 200g of pudding rice
  14. Simmer
  15. Cook for 3-5 minutes
  16. Whisk 2 egg yolks
  17. Whisk in 2 tablespoons of mascarpone.
  18. Take off the heat and add the mascarpone mix
  19. Add a bit more lime zest
  20. Put in oven for 15 minutes at 200 degrees.

My Notes

This is a bit of an awkward recipe because it requires small amount of lots of ingredients you probably don't have lying around, but if you can get the ingredients than it's well worth it! I recommend eating this recipe as soon as you've made it. I find it dries out a lot when kept in the fridge. If you do keep it though, then mix some milk in when reheating to moisten it up a bit.
